January recipe
Artichoke Lemon & Garlic Chicken

Preheat oven to 375
6-8 chicken thighs
2 Lemons thinly sliced
8 cloves of garlic crushed
1/2 tsp salt and 1/4 tsp pepper
1 12 oz jar of artichoke hearts in olive oil
1 C of cherry tomatoes
3-4 sprigs of fresh thyme
Grease a 9 x 13 ceramic dish. Lay 1/2 of the lemon slices down, then place chicken thighs on top. Add artichoke hearts with brine and tomatoes. Lay lemon slices on top of chicken. Bake in oven for 30-40 minutes uncovered. I served with salad and mashed cauliflower.
