January 2017

When I see this photo taken from my kitchen window a few years back, I can't help but see the beauty that winter brings us. While so many do everything in their power to get away from our Nova Scotia winters I quite like them.  There is something comforting about having  to cocoon ourselves with extra layers of clothes, heavy blankets and sitting by the fire to stay warm. On a "snow day" one can catch up on all the little things that need to be done around the house..., Right!! For me this is a day to read, possibly paint, lazy around and eat treat food, like chips and chocolate, especially together and several hot teas. It just feels special, like I'm on vacation in a foreign country. I find these interlude interrupts really help to recharge my "batteries", while giving me a mental and physical renewed energy. 
I hope this New Year brings lot of interlude moments for you. And if you can't get away from winter perhaps finding the beauty in it well be helpful!

Recipe of the Month
Come New Years Most of us are pretty beat. It's nice to have a fun breakfast New Year's Day but who wants all the work? Here is a make ahead French toast recipe that makes a great celebration breakfast or brunch
Make Ahead Oven Baked French Toast
4 eggs
1/2c cream or milk
1/4c packed brown sugar
2Tbsp orange juice
pinch, each  nutmeg and cinnamon
6 thick slices(1/2-3/4" thick) bread
Icing sugar syrup and or fresh fruit. 
I added coconut milk fat whipped as topping. Recipe to follow

method:
1.In large, shallow dish, combine eggs, cream, brown sugar, orange juice and spices. 
2.Place bread in mixture and leave 5 minutes. Turn bread over leave another 5-10mins. until all liquid is absorbed. If preparing ahead of time, cover and refrigerate overnight.
3. Transfer bread to non-stick cookie sheet or sheet lined with buttered foil. 
4. Bake in 375 f oven for 10 minutes. Turn carefully and bake 10-15minutes longer or until puffed and golden
5. Drizzle with warmed syrup or sift icing sugar on top and serve with fresh fruit and coconut whipped topping. 
tip: The cooked French toast slices can be frozen in single servings and then reheated in the toaster. 
Coconut Whipped topping:
1-2 cans of regular coconut milk meaning not lite. Best if can store in fridge for a day or two. I actually shake the can when I purchase to see if you can hear liquid. Buy the ones that make no sound, means more coconut fat. Remove the coconut fat from the can with a spoon. If you get a bit of the milk in with it that's ok.  In a small to medium size bowl break up the coconut fat using a fork. This may take a while if the fat is really hard, but it will soften. Stir until all the lumps are out. You can add a bit of maple syrup if you want it sweetened, I prefer as is. will keep in the fridge for 3-5 days. left over milk is great on cereal, in coffee or smoothies. :)
