I love this photo with the teapot in the garden. I feel it really reflects Canadians as we celebrate 150 years! Canadians are loved by all and for good reason. Recipe of the month
Raw Strawberry Pumpkin Seed Crisp
The summer is a great time to take advantage of the natural berries that grow in Nova Scotia, but we often tend to pair them with loads of sugar ingredients. Here is a recipe that is delicious, low in sugar and tasty enough to serve to company.
Serves 2
Fresh strawberries-3/4 cup washed and sliced
3/4 c organic pumpkin seeds. Ground. I grind in the nutribullet.
2 tsp of pure local maple syrup
1 can coconut milk, not lite, put in fridge over night.
2-4 basil leaves or lavender leaves.
place 1/2 of the sliced strawberries in a small dish. add 1 tsp of maple syrup. Sprinkle with 1to 2 Tbsp of the ground pumpkin seeds. keep leftover ground seeds in a glass jar in the fridge, they can be added to smoothies, shakes or granola and are high in protein. :)
Open the can of coconut milk and scoop out the thickened coconut milk from the top of the can. place into a small dish. Mix with a fork and use as a topping for the strawberry dessert. Top with a leaf or two of basil or lavender. Enjoy guilt free!
