I can't believe June is upon us already. I find times flies when I work in the garden. For those who know me, you know that I have a bit of an obsession with gardening. I think the appeal for me is the rewards of such incredible beauty, plus there is something very cathartic about digging into the soil and ripping out the weeds. Every week there is a new plant either starting to shoot up from the ground or about to bloom. There's never a dull moment in the life of a gardener. And as my sister's facebook profile reads; If you have drama, you are are not spending enough time in the garden. For me the garden is my drama, especially when the deer eat a plant that is just about to bloom!! :( . And if this is all the drama I have in my life at the time being, then I have a lot to be thankful for!

June recipe:

 Rosy Rhubarb Crisp
with Rhubarb being at its peak for harvest why not put it to good use? 
Bake 350 F -35 minutes
1 C flour or gluten free flour
3/4 C quick oats
1/2 C Brown Sugar
1tsp cinnamon
mix these 1st four ingredients together then add 
1/2 C cold margarine mix until crumbly, press 1/2 of the mixture into 8" greased dish. Save the other 1/2 for topping. 
5C Rhubarb- sprinkle over the crust.
Mix together:
1/2 C sugar
2 Tbsp Cornstarch
1 C water
1tsp vanilla 
boil this mixture for 2 mins. Stir Occasionally, pour over rhubarb, then sprinkle rest of crumb mixture over the rhubarb and bake. 
Serve with whip cream or coconut whip cream.
