  September is the month that helps me to adjust into the fall mood, with not being quite ready to give up on the summer days, but welcoming the cooler mornings and nights after such a hot summer.  It's nice to be gently lulled into the slow transition from summer to fall. There is still lots to do in the garden and I love that I can still sow and reap a second planting of lettuce. I have had the glorious blessing of spending some quality time at the ocean as well as my other favourite place; the garden this summer. It has been a fabulous summer, but I feel the mood changing as many of you are prepping your children for school and university. On that note I would like to congratulate two very stellar clients, whose hard work and dedication will take them to the next level of their life ambitions: Rachael Creighton who competed for and won a full scholar ship to Western University where she will take micro biology and major in Chemistry and Olivia MacLean who has been accepted to The International School of Ballet at the young age of 12. congrats and good luck with your studies.  Once we get back into routine and find our place in this ever evolving world, be sure to carve out a little time for yourself.

No Bake Coconut Cookies Recipe

This is a great after school snack for the kids or yourself. Quick and easy.

2-1/2 C gluten free rolled oats
1 C unsweetened , flaked coconut
2/3C honey
1/2C coconut oil
1C almond butter, can also use cashew butter 
2tsp vanilla extract
6Tbsp dark cocoa powder
Coconut sugar to sprinkle on top 
Himalayan pink salt to sprinkle on top

Directions:
1.Line two baking sheets with parchment paper and set aside.
2.In large bowl, mix the oats and coconut flakes well and set aside.
3.In Medium pot over medium heat, combine honey, coconut oil and almond butter and stir continuously until mixture is melted and mixed evenly.
4.Remove from heat, add in the oats and coconut flakes, stirring continuously. Add the vanilla extract and cocoa powder, keep stirring until mixture becomes thick. 
5.Drop heaping Tbsps of mixture onto cookie sheets. 
Lightly sprinkle coconut sugar and sea salt on top of each cookie.
Place in freezer for at least 20 minutes or until you are ready to serve. 
6.Take the cookies out of the freezer and allow them to thaw for 5 minutes before serving. Sore any leftover cookies in a sealed container for the freezer.  

I would like to close this page with a dedication to my Sweet Sweet friend Jane Stephen who sadly, passed away this summer from cancer. Jane was such a beautiful soul inside and out and even throughout her illness, she always brought laughter and joy to the room. She taught me so much in a short time and I feel forever grateful for how she touched my life and my heart.  Jane was witty, intelligent and so giving and kind to others. Her love of her family and friends, two children Alexandra and Luke, travel, poetry, art, beautiful clothes and jewelry makes it bitter that she left us so soon, but on the sweet side she lived and enjoyed life every day. I loved that no matter where we went, be it the beach, a pub, a cafe, Jane was always adorned in jewelry and a beautiful dress. She was a very classy lady. With all that being said,what I  will miss most about Jane is her contagious laughter.  


And the sun took a step back,
the leaves lulled themselves to sleep
and Autunm was awakened
