What is it about pussy willows that we love so much? I have a large vase of pussy willows in my salon. Seems like everyone that sees them has a nice childhood memory associated to pussy willows. I know for me as a kid, I remember going into the woods on a cool crisp day, usually with a friend and cutting pussy willows to bring into the house. I think the combination of the adventure of finding them, cutting them and bringing them home was a big part of what makes them so special! Ingredients:
11/4 c sugar divided
1/2 c unsalted butter, softened
2 eggs
11/2 c all purpose flour- or gf blend add 1/2 cup more of flour
11/4 tsp baking soda
pinch of salt
3/4 c 2% milk
pink paste food colouring- (Michael's crafts store)
2 c mascarpone cheese
1 c icing sugar
1/2 c 35% whipping cream
2 tsp pure vanilla extract
3 c fresh raspberries + more for garnish
3 Tbsp freshly squeezed lemon juice
1Tbsp freshly squeezed orange juice
3 store bought 4" meringues.
Directions:
Preheat oven to 350. Line a large12 cup muffin tin with paper muffin cups.
Beat together one cup of sugar and the butter in a large bowl until light and fluffy. Beat in the eggs one at a time until blended. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt until well blended. Stir the flour mixture into the butter mixture in three additions, alternating with the milk. Beginning and ending with the flour mixture. Stir in a little food colouring to tint the batter a light pink. Spoon the batter into the muffin cups and bake until a toothpick inserted into the center of a cupcake comes out clean. 16-18 minutes. let cool completely.
Meanwhile, beat together the mascarpone, icing sugar, whipping cream and vanilla in a medium bowl. until the mixture is smooth and blended; set aside.
Combine the raspberries, the reaming 1/4 c sugar and lemon and orange juices in a medium bowl. Using a fork, slightly smash the raspberries to release their juice; set aside.
Break six of the cupcakes into bite sized pieces; reserve the remaining cupcakes for another use. Break each of the meringues into bite size pieces. In each of six 2 cup glasses, place some of the cupcake pieces, layer with about 1/3 c of each of the mascarpone mixture and raspberry mixture, plus a few pieces of the meringue. Repeat until the glasses are full. Top each glass with a few fresh raspberries; serve.
