April 2017


Recently I was in Cuba. It was my first time there and it was a wonderful experience. The trip was a mix of exploring the Havana Cuban culture and staying at a relaxing all inclusive resort right on the ocean.  On the trip back to Nova Scotia I had lots of time to ponder just what makes a get away to another country so special, I mean besides the warm climate, not having to make your own meals or the bed.  I believe there is often something different about another culture that makes one more aware of their own culture. In Cuba people are laid back and relaxed. I was told if someone in Cuba tells you 5 minutes, that means 20 minutes in Canadian time. With sketchy internet service at the best of times, it seemed  people were engaging with each other a lot more and taking in the beauty of the Cuban culture. This was a nice break in its self.  It made me aware of just how much time I spend with social media and how busy I am all the time. Being realistic, means this is not likely to change anytime soon as the meals do have to be made and there is always work to be done, but perhaps making the bed can wait. I believe what I really learned from my recent break in Cuba was that it's necessary! It forces you to slow down, empty the brain and fill the spirit, giving better insight to what is really important in life. I hope in stressful times I can remind myself what the Cuban's say," It's OK, Relax, would you like some rum?

Recipe of the month
Sea Scallops in Chutney, Apple and Pear Sauce
4 Tbs store bought chutney
1C skim milk, I used coconut milk and I really liked it. 
2 tsp olive oil
1/2 apple peeled, cored and sliced into 1/4 inch slices
10-12 sea scallops 
1 pear peeled, cored and cut into 1/4 inch slices

In measuring cup or small bowl, stir together the chutney and milk. Set aside. 
Heat olive oil in a medium size skillet over medium heat. Add the apple slices and cook, stirring for 1 minute. Add the scallops and pear slices; cook, stirring occasionally, 2 minutes more. Reduce the heat to low; stir in the chutney mixture. cook stirring constantly, until the sauce is smooth and evenly distributed and heated through, about 2 minutes. Do not allow the sauce to simmer or boil. Check the scallops for doneness. Serve immediately with your  choice of garnish. I used parsley and a sprinkle of cinnamon.
