The weather has been soooo warm and sunny it's really hard to wrap my thoughts around the fact that it is indeed November! I'm still cutting flowers from my garden and even have some spring flowers blooming again. It's a bit surreal, but as a friend suggested think of it as a gift and for now just enjoy. 
So I will enjoy and try not to be duped into forgetting what is around the corner.... The Holidays!! 
Whether we would like to or not we can't change the holidays and as the Grinch who stole Christmas came to learn you can't stop it either!! I guess this means if I have to do shopping for the holidays in shorts and a tank top so be it! I see a lot of beachy Christmas ornaments out this year. Good call I'd say.

Recipe for the month

Peppermint Meringues


Delicate peppermint meringues are a fun and easy dessert with seasonal flavor. These little cookies will go quickly, so be ready to make extra if you want to share.

Yield: about 4 dozen cookies
               Ingredients

    • 3 large egg whites
    • 1 pinch salt
    • ¼ tsp. cream of tartar
    • ½ c. sugar
    • ¼ tsp. peppermint extract
    • ¼ tsp. vanilla extract
    • Green (or red) gel food coloring

    Directions

    1. Arrange oven racks in top and bottom thirds of oven. Preheat oven to 225 degrees F. Line 2 large cookie sheets with parchment paper.
    2. In medium bowl, with mixer on medium speed, beat egg whites and salt until foamy. Add cream of tartar; beat on medium-high speed until soft peaks form. Add sugar 1 tablespoon at a time. Beat until meringue stands in stiff, glossy peaks. Beat in extracts.
    3. Using small brush, lightly paint 3 to 4 stripes of food coloring inside large piping bag fitted with 1/2-inch tip. Transfer meringue to piping bag. Pipe meringue into 1 1/2-inch rounds onto cookie sheets, spacing 1 inch apart. Bake 1 hour.
    4. Turn oven off. Leave meringues in oven 1 hour with oven door closed. Remove from oven; cool completely. Meringues can be stored in airtight containers at room temperature for up to 2 weeks.
