July 2018


  As Much as I love summer it can be exhausting.
I know it's suppose to be a relaxed season with  supposedly no hectic schedules to attend to, but somehow it seems there is always so much going on. 
I think back to when I was little and would stay at my grandparents in Digby. As Kids, my cousins and I had all the time in the world. We would wake up to hot, humid summer days and set off on adventures to discover ponds with tadpoles, farms with pigs, cows and chickens. We would ride our bikes past the house with the nasty geese, just for the thrill of being chased by them, I only got nipped once. We would find old abandoned "shacks", shacks is what we called them,  with "cool" stuff inside.  There seemed to be fields of raspberries and blueberries where we were allowed to pick as much as we wanted, lets be honest here, as kids that wasn't much! We would do this for hours, often making our way back home for supper and sometimes with a bucket of tadpoles or some odd thing from one of the old abandon shacks we came across or with a bucket of berries that our grandmother  would use to make homemade muffins for us. Even in the dead heat of the summer the wood stove was always going!! And let me tell you those were the best muffins on the planet! Of course we all the know the secret ingredient was love!  But my  grandmother was an incredible cook, as I believe most grandmothers were back in those days. 
Those were the days when parents sent you out for the day without a concern and without a concern is how I remember those summers. Now as an adult I savour those memories and try to keep my schedule not so cramped so that when my grandchildren bring me berries I have time to make them some homemade muffins filled with love and past memories.

Recipe of the Month 
Keto friendly Lemon Blueberry Muffins

Ingredients
  • 2 Cups Bob's Almond Flour
  • 1 Cup Organic Valley Heavy Whipping Cream (no carbs)
  • 2 Large Eggs
  • 1/4 Cup of Butter (melted)
  • 5 drops Stevia (or more to taste)
  • 1 tsp Baking Powder
  • 1/2 Cup Fresh Blueberries
  • 1/2 tsp Pure Lemon Extract
  • 1/4 tsp Lemon Zest
Instructions
  1. Preheat oven to 350
  2. Zest lemon and melt butter
  3. Crack eggs into a large mixing bowl and whisk until well mixed
  4. Add all other ingredients into the mixing bowl with eggs and mix until well combined
  5. Pour muffins into 12 silicone baking cups
  6. Bake for 25-30 minutes (until golden brown and a toothpick comes out clean)
