 My husband and I attended the wedding of my husband's son and fiance last weekend. It was a beautiful wedding and we had a fantastic time. 
Summer can be so busy already and trying to juggle all the balls of work, family, hosting company, other special occasions and vacation can be a bit taxing. 
I think the secret to keeping it together is not to worry about keeping it together. 
Just to stay focused on what really matters most and ask yourself  the question, in the future will it matter?, can help you to put things in perspective. 
The more we can do for ourselves, by looking after our own needs and self care the easier it will be to handle the busy times in life and help so that we don't feel so overwhelmed when several events come up at once.  Being present at a special occasion is so important for it will fly by in a blink and if you missed it because you were stressing over something else you will then miss out on the memory as well and that is truly sad.

Recipe of the month


Keto garlic bread
Do you miss bread on a keto low-carb diet? Then you’ll love this!
This delicious Keto/Paleo bread can be served as an appetizer, a snack or as a side dish. It's crispy on the outside, soft on the inside and has a lovely flavor thanks to the garlic butter. Only 1 gram of carbs per piece.

Ingredients

Bread
  • 5 tbsp almond flour
  • 1¼ tbsp ground psyllium husk powder
  • ½ tsp baking powder
  • ¼ tsp sea salt
  • ½ tsp cider vinegar or white wine vinegar
  • ¼ cup boiling water
  • ¾ egg white
Garlic butter
  • 1 oz. butter, at room temperature
  • ¼ garlic clove, minced
  • ½ tbsp fresh parsley, finely chopped
  • 18 tsp salt

Instructions

Instructions are for 5 servings. Please modify as needed.
  1. Preheat the oven to 350°F (175°C). Mix the dry ingredients in a bowl.
  2. Bring the water to a boil and add this, the vinegar and egg whites to the bowl, while whisking with a hand mixer for about 30 seconds. Don't overmix the dough, the consistency should resemble Play-Doh.
  3. Form with moist hands into 10 pieces and roll into hot dog buns. Make sure to leave enough space between them on the baking sheet to double in size.
  4. Bake on lower rack in oven for 40-50 minutes, they're done when you can hear a hollow sound when tapping the bottom of the bun.
  5. Make the garlic butter while the bread is baking. Mix all the ingredients together and put in the fridge.
  6. Take the buns out of the oven when they're done and leave to let cool. Take the garlic butter out of the fridge. When the buns are cooled, cut them in halves, using a serrated knife, and spread garlic butter on each half.
  7. Turn your oven up to 425°F (225°C) and bake the garlic bread for 10-15 minutes, until golden brown.

Tip!

If you don't like almond flour or if you have an allergy, you can make this recipe with coconut flour instead. Substitute the amount of almond flour for a third as much of coconut flour and double the number of egg whites.
