Here is a recipe that had to be inspired by the Gods of love. Perfect for a Valentine treat.
Decadent Chocolate Mouse
Don't be deterred by the ingredients, Just trust me on this one.
2 med. size ripe avocados-1/2C +2Tbs Pure Maple Syrup
2Tbs coconut oil (optional)-1-2 tsp vanilla extract
1tsp balsamic vinegar(aged is best)-1/2 tsp soy sauce
1C pure cocoa powder-4C berries of your choice
mint leaves for garnish-cocoa nibs optional
Blend 1st 6 ingredients in a food processor until smooth and creamy. Add cocoa powder ( but be sure to stir out any lumps first) Distribute 1/2 of berries among 4 dishes follow with a dollop of Chocolate mouse then remaining berries. Garnish with mint leave and cocoa nibs. For those that are adventurous you could try adding a small amount of liquors such as khaula or my favourite Raspberry. I topped with coconut whip cream. recipe follows:
Coconut milk cream whipped
1 14oz can of coconut milk (reg. not light) Put in the fridge-1-2Tbs of sugar or to taste.
Putting the coconut milk in the fridge turns the cream in the milk to a solid and having it cold helps it to whip easier. Open the can of milk, do not stir or shake. Scoop out the cream into a med size bowl. Using electric beaters, beat the cream adding sugar a little at a time until thickened. Once whipped store in the fridge.
