February the month of peace and love
For me February is often a peaceful month. The excitement of the holidays is completely out of my system and the peaceful days of winter bring such comfort and make me feel relaxed. There is nothing pressing or pushing me to get to it, such as my garden or outdoor activities. The lour of sitting by a nice fire and reading a good book seems to have a greater pull on my this time of year. Having Valentines in the middle of the month just makes February all the sweeter; an excuse to eat sweets and be doubted on by my husband. No Bake Peanut Butter Pie

crust:
This dessert will make your heart sigh with delight.
1 1/2 c of almond meal
1/4 cup of cocoa powder
1/4 c of maple syrup
3 Tbsp of coconut oil
pinch of salt.
Filling:
1c of creamy all natural peanut butter
3/4c of water
1/2c of melted coconut oil
1/2c of maple syrup
1/4tsp of salt- If using no salt peanut butter you made want to add an extra shake from the salt shaker.
Chocolate Topping:
2 Tbsp of melted coconut oil
2 Tbsp of pure maple syrup at room temperature
3 Tbsp of cocoa powder.
Line an 8" springform pan or pie dish with parchment paper and set aside.
To prepare crust, combine all the ingredients in a large mixing bowl and stir well to create a uniform dough. Press the dough evenly into the bottom of the lined pan. I used plastic wrap to press into place then discarded. set aside.
To prepare the filling, combine the four ingredients in a blender, and blend until completely smooth and silky. Pour the filling over the top of the crust, and use a spatula to smooth the top. Place the pie in the freezer to set until firm, about 4-6 hrs.
Once the pie is firm, prepare the chocolate topping. Combine the coconut oil, maple syrup, and cocoa powder in a small bowl and whisk well to combine, creating a smooth chocolate sauce. Use the parchment paper to easily remove the pie from the pan, then drizzle the chocolate over the top.
Store in freezer- remove 15 mins before serving for easy slicing! Be prepare to meet the love of your life! :)
