Recently my husband and I went for an early morning round of golf. It was a cold morning and we made sure to dress extra warm with layers and cotton gloves. when we arrived we learned that our tee off time would be delayed by one and a half hours due to the frost. It was disappointing, but we could work on our golf swing on the range at least.
As we drove in our little golf cart to the range I could see how the frost was clinging to the greenery and it was soooo pretty. I thought, this would be a good time to get some great photos. I mentioned it to my husband and he said sure, why not. So I left him at the golf range, took the cart and drove along the cart paths around the course.
I have to tell you it was heavenly, so peaceful as there was no one on the course, a mist from the mix of cold air meeting warm air was hanging lazily in the background and above the lake on hole #4. The sun was full and bright and if that wasn't enough about 4 or 5 geese decided to go for a swim in the lake. It was absolutely magical!
Pleased with the images I captured and the soulful connection I felt to nature, I thought I better head back to the golf range as I had been gone for a fair amount of time. My husband was looking for me as I had only given him time to take the one club from his golf bag before I scooted off. He wasn't too impressed that he only had the one club to practice with that whole time. Oops! His dismay did not last long as I was so excited about what I had experienced and it was time for us to tee off. I can't say it was my best day at golf, but I can say it was of the most magical in nature.

If you would like to donate items as well the women's shelters tell us items such as new underwear, socks and personal hygiene products are needed. Also it's nice to give luxury items as well, such as lotions, make-up, tweezers, nail files etc. Perhaps you don't have a used purse to donate, gift bags and tissues will be needed as well or money donations are welcomed to purchase gift bags and tissues to wrap the purses in. You can drop off the purse(s)and or items at my open house in Nov or you can arrange a time with me.

I made a cauliflower crust so that I could cut down on the carbs. If you want to do the same just chop up one head of raw cauliflower in the food processor( I got about 3-4 cups of cauliflower rice from processing in the blender)and mix in 2 lg eggs.I believe you can even buy cauliflower already in a rice format at the grocery store. I am sensitive to chicken eggs so I used 6 quail eggs and that worked great.
I added a sprinkle of salt and pepper and then fried it in a frying pan to remove as much moisturizer as possible. This is the secret to getting a crispy crust. II'm thinking if you made the cauliflower rice the day before and let it sit in the fridge for a day in a tea towel it would probably be even less moist.
I then divided the mixture into two and patted down onto parchment paper laid over small pizza pans that are about 8' x10" each. I found these non stick pans at WalMart and I have to say they come in very handy for daily cooking especially on the barbeque.
I cooked the two formed crust in a 375 degrees oven for about 6-7 minutes. I removed and carefully flipped the crust over to brown the other side and cooked again for 6-7 minutes. I then let it cool before I added the toppings.
Pizza toppings
4-6 medium sizeRoma tomatoes chopped and sauted in avocado oil in small frying pan with salt, pepper and dried oregano to taste.
1 large onion sliced and cooked in avocado oil in medium size frying pan.
while the onions are sauteing,
slice up 4-5 organic mushrooms and add to onions.
While they are sauteing finely chop a large garlic clove or two. add this to the onion and mushrooms just as they are finishing up after about 5-6 minutes. Put aside.
8 slices of cured salami. I got mine at Organic Earth.
10-12 basil leaves
1/4-1/2 peach
mozeralla cheese -I used Dayia shredded cheese.
When your pizza crust are cooked to your liking, some like them crispier than others, Add the cooked tomatoes to each crust in a thin layer. I saved the left over cooked tomatoes for another creation that will happen tomorrow as the mood strikes me. :)
then top with the cured slices of salami. I cut mine up with scissors, I find it much easier to eat this way, then cover with saute onion, mushroom and garlic mix.
top this with basil leaves and a light sprinkling of shredded cheese,
then top with about 9 pieces of chopped up peaches per pizza. You don't want too much, or it will be too sweet.
Cook this in the oven for another 5-6 minutes and it's ready.
This is a guide for how I made my pizza. Feel free to substitute ingredients and if you do so let me know how it went.
