What beauty the month of July brings us. 
Oh to laze, lounge and linger in the warmth of our gardens and frolic at the beach. 
Or so we can dream!! 

July is the month that brings the heat and with it lots of outdoor activities. Be mindful to wear sunscreen and reapply every 2 hours.

Recipe for the month
Limoncello Coconut Pops 
(raw, vegan, grain free, gluten free, refined sugar free)
from The Clean Dish 

Ingredients:
1 Tablespoon unrefined, virgin coconut oil
1/2 C shredded coconut, unsweetened +some for dusting
1/2 C blanched Almond flour
1Tbs maple syrup
1Tbs Limoncello or grain &gluten free vodka(e.g. potato vodka)
1/4 tsp lemon extract
tiny pinch of sea salt
optional 1/8 tsp of turmeric powder for colour. 

Directions:
In a small saucepan, melt coconut oil over low heat. 
combine all ingredients in a medium size bowl. 
Form 10-12 balls and roll them in coconut shreds; if the dough is too crumbly, add a bit more coconut oil. 
refrigerate for at least one hour before serving. 

Lovely with a bowl of sorbet or gelato  possibly chocolate flavour?!
