Summer recipe
Dairy Free Gluten Free Rhubarb (or Berry of your choice) Custard
this is a great dessert when you need to whip up something easy and quick. compliments of Sally Nickerson
Mix together:
1 1/3 c sugar- I used palm sugar
5Tbls Gluten Free flour
Combine and blend in:
3 eggs
1/4 c of dairy free milk- I use almond milk
2Tbsp of dairy free margarine- I like earth balance
3-4 C of fruit
Whip Topping:
1 can of regular coconut milk-(not lite) I like Tosca or Thai Kitchen put in fridge for a few hours before using.
1/2Tbsp of maple syrup
1/2 tsp of vanilla
For Custard:
Beat until smooth, stir in fruit.( Keep in mind that a sweeter fruit may not require as much sugar as rhubarb would.) Pour into an 8x8 baking dish. Bake 350 oven for 30-45mins.( I found 35 minutes was perfect) until set around the edges, but still soft in the center.
Whip Topping:
Scoop out the coconut fat from the can of coconut milk into a dish. When you see the coconut liquid do not use this, only the fat, add a dash of vanilla and the maple syrup mix with a spoon to remove lumps and soften. Do not over mix or it will get runny. Can add a bit more Maple Syrup if you want it sweeter.
